Balsamic Chicken With Baby Greens
This is simple, but very tasty.
25 min | 10 min prep
SERVES 4
4 boneless chicken breasts, cutlets
1/4 teaspoon salt (to taste)
1/8 teaspoon pepper (to taste)
2 tablespoons extra virgin olive oil
1 sprig fresh rosemary (rinsed)
1/4 cup balsamic vinegar
7 ounces baby greens, bagged
Preheat large saute pan on medium high heat for 2 to 3 minutes. Season both sides of chicken with salt and pepper.
Place oil in pan; swirl to coat. Add chicken; cover and cook 4 to 5 minutes on each side or until internal temperature is 165°F While chicken is cooking, cut up the rosemary (leaves only).
Add remaining ingredients, including rosemary, to pan. Rotate chicken to top of the greens. Cover, remove from heat, and let stand 1 to 2 minutes or until greens are wilted.
Serve warm.

I sliced my thumb with a knife last night while trying to cut vegtables for Spaghetti Bolognese. I cried with the pain and my thumb has been throbbing all day today so I dont think I'll be contributing much to this thread

That is the best diet. All ive thought about is food today I feel so damn hungry. I bloody hate dieting!

Diet's are the worst..
I was opting for the liquid diet tonight..
(BEER ONLY)..
but succumed to food.. i had pitta bread with halloumi cheese and lettuce... yummy.. but it was hrs ago.. so i should drink it off soon enough...

oooooooooh my hubby is on hols this wk cos its kids half term...........he makes me eat tooooooooooooo much............its soooooo nice coz we eat lovely stuff and drink way toooo much............but nxt wk it will be all his fault i have gained weight..........AGAIN!!!!!!!!!!!!!!!!

I love beans on toast Trudi but it has to be bachelors beans instead of heinz. I dont like any heinz product especially their ketchup. Chef is my favourite, yummy!!

I'm sorry but I bloody love Branston Beans!!!! Bloody Heinz went all healthy and changed their recipe here!! Less salt and sugar!!! God they are beans!!! How unhealthy can they be!!! Branston saved the day!!! Beans on Toast with Worcestershire sauce or Tabasco - depending on mood - lovely!!!!
