What's cooking?
After great success.. i have decided to open a "What's Cooking?" thread..
Post all recipies and cooking tips here ..
Tonight I think i might make green beans..
But I dunno how and what with.. Chicken or fish?
I will update you all on how it goes and what I've decided..

i always get fresh green beans, cook them slowly for a few hours with a few strips of bacon in the pot, then about 45 minutes before they are done i put whole peeled potatoes in with them to cook. and then serve them with pork chops! one of my faves

Yeah.. I much prefer the fresh ones.. I avoid anything frozen..
I'll put them in the pressure cooker cos they do take forever!!
I happen to have 2 pork chops handy in the freezer..
I might just do that.. and add some carrots too..
Nice boiled veg with chops.. with lots of lemon and some EVOO..
Here in Cyprus they have them "yiahnista" which is basically cooked with tomatos...
It's nice, but it can be a little heavy for a night-time meal..
Fasolaki kai Patates yiahnista - Green Beans and Potatoes in Tomato Sauce
330g olive oil (thats a bit too much use just a couple of tablespoons)
2 onions, finely chopped
3 cloves of garlic, finely chopped (optional)
2 medium sized potatoes, peeled and cut in quarters lengthwise
1 kg green beans, washed and trimmed (frozen beans can be used)
4 ripe tomatoes, finely chopped or grated
1 teaspoon salt
½ teaspoon freshly ground pepper
In a large deep saucepan fry the onions and garlic in oil for 5-7 minutes until translucent. Add the green beans and cook for a further 5 minutes stirring continuously.
(you can also add chicken or pork at this stage.. saute it a little with olive oil)
Add the potatoes, the rest of the ingredients and 1 cup of water. (If frozen beans are used use less water).
Bring the sauce up to the boil, then lower the heat to medium low and cook for 30 to 45 minutes or until potatoes and beans are cooked.

Ok so i made my beans..
Balsamic green beans..
I boiled them in the pressure cooker with carrots..
Drained the water..
I added 2 tsp of Kerrygold Garlic and herb butter, 1 tsp of brown sugar and balsamic vineger..
Tossed them in the saucepan.. and served..
Pork chops in the oven with bell peppers, tomatoes and onions..

Tequila Lime Chicken Breasts

SERVES 4
1/3 cup orange juice
1 tablespoon grated lime rind
3 tablespoons lime juice
3 tablespoons tequila
1 tablespoon chili powder
1 tablespoon vegetable oil
1 jalapeno pepper, minced
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 chicken breasts or 8 chicken thighs
1. In large bowl, whisk together orange juice, lime rind and juice, tequila, chili powder, oil, jalapeno pepper, garlic, salt and pepper.
2. Trim any fat or loose skin from chicken. Add chicken to marinade; turn to coat. Cover and refrigerate, turning occasionally, for 4 hours (up to 12 hours).
3. Heat 1 burner of 2-burner BBQ or 2 outside burners or 3-burner BBQ to medium. Brush grill over unlit burner with oil. Place chicken, bone side down, on greased grill. Close lid and gril until bottom is marked about 25 minutes.
4. Turn and grill until no longer pink inside and juices run clear when chicken is pierced, about 20 minutes. 5. Move any pieces that need more crisping or colouring over direct medium heat. Close lid and grill until golden grown, about 3 minutes.

275g/10oz unsalted butter
85g/3oz pecans, broken into pieces
85g/3oz milk chocolate, cut into large chunks
85g/3oz white chocolate, cut into large chunks
175g/6oz plain flour
1 tsp baking powder
4 large eggs, lightly beaten
1 tsp vanilla essence
325g/12oz caster sugar
Method
1. Preheat the oven to 170C/325F/Gas3. Line a 30x20x3.5cm/12x8x1½in tin with lightly buttered greaseproof paper or foil.
2. Put the plain chocolate and butter in a large bowl, place over a pan of simmering water and allow to melt.
3. Sieve the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in the sugar. Add the eggs and vanilla essence. Fold in the flour, nuts and chocolate.
4. Pour the chocolate mixture into the prepared cake tin. Place in the oven and bake for 20-25 minutes. The top should be firm but the inside should feel soft when cooked. Allow to cool in the tin. Remove the brownies from the tin and cut into squares.

This recipe for Goeey Pumpkin Butter Cake is to die for.
Gooey Pumpkin Butter Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Gooey Pumpkin Butter Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
Directions
Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.
Serve with fresh whipped cream.
